Beef & Lamb

 

Our Scotch Beef and Scotch Highland Lamb is supplied by Scotch Premier. It is an unrivalled quality meat produced naturally from the lush green pastures of Scotland's hills and glens.

The meat is produced in accordance with the Scotch Quality Beef and Lamb Association's Total Quality Assurance Scheme. The Scottish farms operate to their stringent farm assurance standards covering all aspects of animal welfare, wholesomeness and trace ability. It is processed to strict quality assurance and food hygiene specifications which ensures the quality of the meat we serve is second to none in the world.

Romney Salt Marsh Lamb

We have also recently added Romney Salt Marsh Lamb to our product range. This is supplied by Blackwell Hadden Farm Produce. It is free range and has a rich sweet flavour with a real touch of quality. The distinct flavour is a direct result of the natural marsh land grazing over which the lambs roam freely in the summer months right through to the autumn.  The natural grasses and samphire are free from any form of fertilizers and provide a totally natural environment for the sheep.

Dry Aged Maturing
We hang our beef and lamb to maximise taste and tenderness. Our beef is hung for 3 weeks and our lamb for 5-7 days in our chillers. This helps the natural enzymes to break down the tissues and make the meat succulent and flavoursome.
